Review: Tai Wah Pork Noodles



Located at a coffee shop under a HDB block in Woodlands is the hidden gem — Tai Wah Pork Noodles. This stall has been awarded the Michelin-Star Bib Gourmand Recognition for its delicious Pork Noodles, also known as “Bak Chor Mee”. Only those that serve the most outstanding delicacies with quality ingredients, overall flavours and consistency over time are able to achieve the recognition. Let’s dive in to explore the dish using our 5 senses!




The Sight


The Bak Chor Mee came with a bowl of Mee Pok noodles (flat and yellow egg noodles) that is accompanied by a generous heap of minced meat, slices of pork liver, a few meatballs, a wonton, pork lard and sprinkled with green spring onions. Compared to the usual pork noodles you get from regular stores, this store particularly adds a few pieces of fried and crispy sole fish. Additionally, if you order the dry version, you get a separate bowl of sole fish soup brimming with fat oil, slices of seaweed and a plentiful amount of spring onions as garnishing.



The Smell


With every slurp of noodles, there is a strong sour scent, mainly from the black vinegar added to the sauce for the noodles. As the dish is filled with a wide variety of pork, there is a meaty smell whenever we stir the noodles.



The Sound


“Mmhmmm…”, we were slurping noodles continuously as the dish is very addictive and keeps making you want to eat more.




The Taste


The secret recipe to this irresistible dish definitely got to be the sauce for the Bak Chor Mee, the special mix of sole fish to the dish and the pork lard! For the dry version, the sauce is made up of a concoction of black vinegar, lard oil and chilli sauce for spicy lovers. It adds tanginess and a little kick of spice to the dish. The sole fish creates a layer crispr texture and sweetness. And not forgetting the pork lard that gives extra fragrance and enhances the overall taste with its juicy fatty oil. And, all the slices of pork liver are very tender and fresh with rich and mildly bitter aftertaste.



The Verdict


We understand why Tai Wah Pork Noodles is able to obtain a Bib Gourmand Recognition for its signature Bak Chor Mee. It is of no doubt that it is overall very umami and is of the same quality with every order. You definitely need to give it a try if you haven’t! It will bring you to a new world of Bak Chor Mee. Even though they only serve Bak Chor Mee in their stall, they have 2 different versions to choose from: Dry or Soup. The only difference between dry and soup is that for soup, the noodles are mixed together with the sole fish soup so it can be slightly soggy after a while.
