Review: Sushi Tei - Chasyu Yuzu Hiyashi Chuka



As the summer waves hit these months, Sushi Tei has launched their ‘Taste of Summer' menu! Nothing can beat the heat better than a bowl of cold Chasyu Yuzu Hiyashi Chuka. It’s okay if you haven’t heard of it because we’re here to introduce it.


Here’s a basic rundown of the dish: Chasyu refers to braised pork and hiyashi chuka means chilled ramen noodles. So when you put it all together, it’s just chilled ramen noodles with braised pork with yuzu flavour. Originating from Japan, this style of noodles is served in the summer and its toppings are usually colourful and served with a tare sauce.


Now you’re acquainted with the Chasyu Yuzu Hiyashi Chuka, it’s time to get friendlier!




The Sight


The dish is a colourful rendition served on a black canvas: green from the cucumbers, yellow from the shredded omelette, orange from the peeled prawns, red from the sliced cherry tomato and brown from the braised pork and chuka kurage (seasoned jellyfish).



The Smell


As the dish is served chilled, the smell isn’t as prominent. However, there is a faint scent of yuzu if you were to give a good sniff.



The Sound


SLuRrP!!!

And nothing else.

Why?

Slurping enhances the aroma and flavours of the dish and is evident that you’re enjoying your meal.



The Taste


Rather than the vibrant colours of the dish that leaves a strong impression, its flavours are like the gentle breeze that you need in the mid-summer heat. It’s refreshing, light and doesn’t linger. The noodles were medium-sized, squared but with soft waves. The noodles break off cleanly as you bite into them. The tare sauce was a mix of gentle sweetness and light tanginess of yuzu. Other ingredients such as the cucumbers, and shredded omelette complement the flavours and add textures — crunch, crisp and shreds — to the dish.


The Verdict


It’s your summer go-to that you’ll never be enough of. If you’re a fan of chilled dishes like us or just want to explore another realm of chilled noodles in Japanese cuisine apart from cha soba and zaru udon, make sure to give it a try at Sushi Tei.


P.S. We don’t know how long the Chasyu Yuzu Hiyashi Chuka will be on the menu.
