Review: Kajiken

Have you ever gotten tired of the typical Japanese pork broth ramen? Well we’re here to spice things up; both literally and figuratively. *not a sponsored article*



This week, we’ll take you on a jaunt with the Mazesoba at Kajiken. Mazesoba is a dry noodle dish that originated in Nagoya and Kajiken specialises just that with seven variations of the ramen. While there’s the Taiwan-style spicy Mazesoba, as a first-timer, we went with the basic — Original Mazesoba.




The Sight


The ramen came with spring onions, slices of chashu, poached egg, bamboo shoots and seaweed to top things off. Something different from usual Japanese ramen, the noodles were much thicker, slightly wavy and yellowish. Overall, the colours really make this dish look really appetising. It came with complimentary hard-boiled eggs and refillable roasted barley, so you don’t have to worry about ordering drinks.



The Smell


There is a faint scent of seaweed, crisp fragrance of spring onion and slightly roasted-salty aroma coming from the chashu.




The Taste


Following the instructions, we mixed everything together for 20 seconds. And then, we dig in! Everything just blends well together. The sauce underneath combined with the yolk of the egg coats onto every strand of noodle. It’s salty, well-seasoned yet refreshing at the same time. The chashu was tender to the bite with just the right amount of lean meat and fats in it. There’s this slightly charred and roasted fragrance from it. Whatever they did to this meat, they’re doing it right.



The Sound


It was a battle with hunger and self-control. Once you start eating, you can’t stop slurping. It took just under 10 minutes for us to finish the bowl of ramen.


Additionally, if you’re still hungry, you can ask the staff for ‘oimeshi’. It’s basically rice for you to mix with the remaining sauce. Don’t let it go to waste.



The Verdict


The greatest compliment to the chef is by finishing everything and we sure did. For those ramen fans out there, the Mazesoba is a must-try and refreshing addition to your list of ramen conquests.
