Review: Ivan's Carbina

As always, Singapore takes pride in their hawker culture, as you can always find food that is equally if not more delicious than restaurant tiers. Ivan’s Carbina is located at a coffee shop at the void deck of a HDB flat in Woodlands.

Apart from the usual chicken chop and spaghetti, Ivan’s Carbina also specialises in rosti. For those who have not heard of it, rosti is a Swiss dish consisting of potatoes. It’s shaped like a pancake and tastes similar to a hash brown. Sounds delicious? But, it’s going to be a story for another day. Today, we’ll be introducing the Aglio Olio Chicken Parmigiana instead!





The Sight


The Chicken Parmigiana is covered with a generous amount of mozzarella cheese, with herbs scattered on top. Definitely an eye candy for cheese lovers. We dined-in to get the best possible food experience. So when the dish is served, we can still see the mozzarella cheese sizzling a little. The aglio olio placed beside the chicken parmigiana glistened under the lighting with loads of minced garlic and mushrooms. Very appealing.


The Smell


We took a big whiff of the food we had in front of us. There’s the smell of mozzarella cheese mixed with the fragrance of the garlic. And if you have a super sensitive nose, there’s the light scent of tomato masked under all the other aromas.


The Taste


Three words to describe the taste of the chicken parmigiana: CHEESY, JUICY, APPETISING. If you’re lucky, you might even manage to get a decent cheese pill from it. The cheese and the tomato sauce underneath it makes a good pair. One may assume that having that much cheese would be a little filling but together with the acidity of the tomato creates a rich and appetising umami flavour, leaving you craving for more. Besides the umami and juiciness of the chicken, another thing that might just be one of our favourite is the fact that they didn’t remove the chicken skin. To all chicken skin lovers, this might be your holy grail. In contrast to the usual spicy aglio olio, the aglio olio at Ivan’s Carbina does not contain any chilli. It’s a simple stir-fried spaghetti made from olive oil and garlic. Definitely a wise choice so that it does not overpower the umami of the chicken parmigiana.



The Verdict


If you haven’t figured out our verdict from all that, you really have to try it yourself. With its hearty food portion and unique menu, Ivan’s Carbina is a breath of fresh air from all the other mainstream western restaurants.
