Scallion Pancake

This week on Trycipe, we’re venturing into Chinese street food! Time to get your hands dirty and make some scallion pancakes!

Scallion pancakes, also known as 葱油饼, is a well-known street food in China and is a traditional dish well-loved by the Chinese people. It is usually eaten for breakfast or as a simple snack when hungry.

Ingredients:
95ml of water 💧
A pinch of salt 🧂
150g of all purpose flour
30g Spring Onions/Green Onions (the more, the better)
¼ cup of all purpose flour
¼ cup of corn starch
20g of unsalted butter
Vegetable oil
Recipe:
Mix both water and salt together in a bowl and stir well 🥣
Pour the 150g of all purpose flour into the mixture and mix well 🥣
Knead the mixture until a dough is formed
Cover the dough with either a cloth or plastic wrap and let it rest for 10 minutes ⏱
Divide the dough into 4 pieces using a dough cutter
Knead each piece into round shape like a ball ⚽
Chop green onions/spring onions into small pieces
Add a pinch of baking soda to the green onions and stir
Mix ¼ cup of all purpose flour and corn starch together in a bowl 🥣
Spread a bit of the mixture of flour onto the surface of the table/board
Use a rolling pin to roll and knead the dough to about 18cm diameter
Add some mixture of flour onto both sides of the dough after rolling
Repeat Step 11 and 12 for all 4 pieces of dough
Stack the 4 pieces of dough together and continue rolling until the dough gets thinner
Peel each layer of dough gently
Brush melted butter onto each piece of dough
Add the chopped green onions onto the dough and spread them out
Fold the dough into a square/rectangle shape by folding the sides
Repeat Step 16 to 18 for the remaining pieces of dough
Add oil into a frying pan and adjust the fire to medium heat 🔥
Place the folded dough onto the pan 🍳
Fry until golden brown
Ready to be served! 😋
Tips:
If you want to enhance the flavour of the scallion pancakes, you can add mozzarella or cheddar cheese alongside with the green onions before folding the dough. By doing so, it will definitely bring out the ooziness of the cheese when eaten.
Adding baking soda to the green onions allows them to become softer and smoother when fried.
Remember to add flour onto each layer of dough before stacking them to prevent them from sticking to each other when rolled since you have to peel them off after rolling.
